Another thought. Creationists are perfectly correct. Evolution IS only a theory.[1] Methodological naturalism DEMANDS that we do not conflate model/theory [the intellectual map] with reality or nature [ the "terrain"]. So naive realism is indeed intellectually very unsound. Their is no epistomologically rigourous way to absolutely confirm any fact or theory, to know how close we are to reality.
But when creationists insist on this [or indeed any theist who makes a "god is real" claim] kicks an "own goal", because religion is steeped in naive reality and metaphysics.

1. Evolutionary theory is of course a cluster of many individual theories, hence evolutionary theory is used in the plural sense. And evolution is an empirical fact.
